  • 1 cup (120g) panko breadcrumbs
  • 1 packet (1 oz / 28g) ranch seasoning mix (or 3 tablespoons homemade ranch seasoning)
  • ½ cup (60g) grated Parmesan cheese
  • ½ cup (120ml) buttermilk (or substitute with regular milk mixed with 1 teaspoon lemon juice)
  • 2 tablespoons (30ml) olive oil or melted butter
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat and Prep: Preheat your oven to 375°F (190°C). Lightly grease a baking dish with non-stick spray or a thin layer of olive oil.

  2. Prepare the Coating: In a shallow bowl, combine the panko breadcrumbs, ranch seasoning mix, and grated Parmesan cheese. Mix well to ensure the ingredients are evenly distributed.

  3. Dip the Chicken: Pour the buttermilk into a separate shallow bowl. Dip each chicken breast into the buttermilk, ensuring it’s fully coated. Then, press the chicken into the breadcrumb mixture, turning to coat both sides evenly. Place the coated chicken breasts in the prepared baking dish.

  4. Add a Crispy Finish: Drizzle the olive oil or melted butter over the top of the chicken breasts. This will help them brown and crisp up in the oven.
